Chef & Founder
Robert Rosales; was born in Peru- Peru was instructed in culinary arts since his early years. Robert moved to the U.S. in 2011, where he began working as a dishwasher building his way up. Along the way, he worked with some very talented chiefs one of whom is Chief Carlos Bresia. Robert worked alongside learned the art of ceviche, and sushi raw. He founded Peru ceviche bar and restaurant with some partners who have created innovative concepts that blend Peruvian food with local products.

Our approach is Peruvian food with a Miami twist, influenced by traditional northern Peruvian cuisine and respecting local South Florida businesses and ingredients.
